Can Sucraclear V2 be used cold process?

Sucraclear V2 requires heat to be able to achieve a transparent gel.

Why is my gel with Sucraclear V2 not transparent?

Sucraclear V2 needs to be heated to 80oC and held at that temperature until the powder is fully hydrated. The powder will become translucent when it is fully hydrated, then it can be homogenised together. Any traces of oil can also cause haziness in the gel.

Can I use Sucraclear V2 as a thickener for my emulsion?

No, unfortunately Sucraclear V2 does not have any suspending properties so would not be able to thicken and stabilise the oil droplets within an emulsion.
