A Natural Replacement

The key roles of an emulsifier is:

  1. To form a physical barrier between the oil and water phases
  2. Organise the internal phase (either droplets or liquid crystal type arrangements)
  3. Provide texture and body to the emulsion

Natural emulsifiers like plant-based esters can easily replace synthetic options to achieve the above, providing effective texture and stability whilst supporting a more sustainable profile.
